I have been living in my apartment now for more than three years and i am finally having myself a little herb garden in my windows sill. My window sill faces west and get a lot of sun from noon on.
I have cilantro and chives which are growing in the same pot. I started them from seed. In another pot i grew thyme from seed, this one i started later then the rest and i might have over watered it, but its coming back slowly. The final pot i have i purchased at a garden store. It has sage, rosemary and basil, they were full grown. Growing from seed is simple with herbs like cilantro, chives and thyme. Just keep the soil moist, use a water spray bottle. The small amount of herbs i have would be enough for a family two to three people. Having herbs in my apartment makes me more prone to add some chopped herbs to my meals instead of salt.
With all of the sunlight i get i have to water them each night as not to have them get dried up and die, it don't take much for certain herbs to wilt due to to much heat.
Take some of my ideas and go with it yourself, you will be surprised by the results, you also can kick up your food a notch or two by adding another layer of flavor to a dish.
