Photos below of my first Venison Roast and it turned out very well. Shout out to a friend at work that had a lot of Venison and decided to to give some to me!!!!
A simple recipe of carrots, onions, sweet potatoes, celery, butternut squash, veal stock and air dried herbs like thyme and rosemary. Venison is very lean, therefore it can dry out if not cooked properly. To help with this, i smothered the whole outside of the seared roast with bacon jam and covered with foil. I removed the foil with 30 minutes left to crisp up the bacon jam. You cant help but watch the bacon grease run down the roast and coat it it fatty goodness!!!!
